Description
Prepare a week’s worth of healthy salads using your air fryer for quick and easy meal prep.
Ingredients
- 2 cups mixed greens
- 1 cup cherry tomatoes
- 1 cucumber, sliced
- 1 bell pepper, diced
- 1 cup shredded carrots
- 1 avocado, sliced
- 1 cup cooked quinoa
- 1 cup grilled chicken, diced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables.
- Cook quinoa according to package instructions.
- Grill chicken in the air fryer at 375°F for 12 minutes.
- Combine all ingredients in a large bowl.
- Drizzle with olive oil and lemon juice.
- Divide into meal prep containers.
- Store in the refrigerator for up to 7 days.
