A hearty and comforting soup perfect for cold winter days. This Amish-inspired recipe is made easy with an air fryer.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cups beef broth
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf


Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  3. Transfer the beef to the air fryer basket.
  4. Add onion, carrots, celery, beef broth, water, diced tomatoes, corn, peas, salt, pepper, thyme, and bay leaf.
  5. Cook in the air fryer for 25 minutes, stirring halfway through.
  6. Remove the bay leaf before serving.

Notes

  • You can substitute ground turkey for ground beef.
  • Add potatoes if you prefer a thicker soup.
  • Store leftovers in the fridge for up to 3 days.
