A hearty and comforting soup perfect for cold winter days. This Amish-inspired recipe is made easy with an air fryer.
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cups beef broth
- 2 cups water
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen corn
- 1 cup frozen peas
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Preheat your air fryer to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Transfer the beef to the air fryer basket.
- Add onion, carrots, celery, beef broth, water, diced tomatoes, corn, peas, salt, pepper, thyme, and bay leaf.
- Cook in the air fryer for 25 minutes, stirring halfway through.
- Remove the bay leaf before serving.
Notes
- You can substitute ground turkey for ground beef.
- Add potatoes if you prefer a thicker soup.
- Store leftovers in the fridge for up to 3 days.
