Description

Make these easy air fryer breakfast burrito wraps ahead of time for a quick and healthy breakfast. They’re freezer-friendly and packed with protein.


Ingredients

  • 4 large tortillas
  • 6 eggs
  • 1 cup shredded cheese
  • 1/2 cup cooked bacon or sausage
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers. Cook for 3 minutes.
  3. Whisk eggs with salt and pepper. Pour into the pan.
  4. Scramble the eggs until fully cooked.
  5. Lay out tortillas and divide the egg mixture evenly.
  6. Sprinkle cheese and cooked bacon or sausage on top.
  7. Fold the sides of the tortilla inward, then roll tightly.
  8. Wrap each burrito in foil or parchment paper.
  9. Freeze for up to 3 months.
