Description
A creamy and cheesy broccoli cheddar soup made easily in your air fryer. Roasting the broccoli first adds depth of flavor.
Ingredients
- 2 cups broccoli florets
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
Instructions
- Preheat air fryer to 375°F.
- Toss broccoli with olive oil, salt, and pepper.
- Air fry broccoli for 8 minutes until slightly charred.
- In a pot, sauté onion and garlic until soft.
- Add broth and simmer for 5 minutes.
- Stir in cream and roasted broccoli.
- Slowly add cheddar cheese while stirring.
- Cook until cheese melts and soup thickens.
Notes
- Cut broccoli into even-sized pieces for even cooking.
- Use fresh broccoli for best texture.
- Adjust seasoning to taste.
