Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. In a mixing bowl, combine chickpeas, onion, garlic, diced tomatoes, vegetable broth, curry powder, cumin, turmeric, salt, and pepper.
  3. Pour the mixture into an air fryer-safe baking dish.
  4. Drizzle olive oil over the top.
  5. Place the dish in the air fryer basket and cook for 15 minutes.
  6. Stir the soup and cook for another 10 minutes.
  7. Garnish with fresh cilantro if desired.
