A budget-friendly, flavorful chickpea curry soup made easily in your air fryer. Perfect for a quick, healthy meal.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- 1 tsp curry powder
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your air fryer to 350°F (175°C).
- In a mixing bowl, combine chickpeas, onion, garlic, diced tomatoes, vegetable broth, curry powder, cumin, turmeric, salt, and pepper.
- Pour the mixture into an air fryer-safe baking dish.
- Drizzle olive oil over the top.
- Place the dish in the air fryer basket and cook for 15 minutes.
- Stir the soup and cook for another 10 minutes.
- Garnish with fresh cilantro if desired.
- Serve warm.
Notes
- Use low-sodium vegetable broth if you prefer less salt.
- Add a splash of coconut milk for extra creaminess.
