Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup pasta (optional)


Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, mix olive oil, onion, carrots, celery, and garlic.
  3. Transfer the mixture to an air fryer-safe pot or pan.
  4. Cook in the air fryer for 5 minutes, stirring halfway.
  5. Add diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
  6. Cook for another 10 minutes.
  7. If using pasta, add it and cook for an additional 5-7 minutes.
  8. Serve hot.
