Description
A quick and easy soup recipe made in the air fryer, perfect for busy days.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup pasta (optional)
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, mix olive oil, onion, carrots, celery, and garlic.
- Transfer the mixture to an air fryer-safe pot or pan.
- Cook in the air fryer for 5 minutes, stirring halfway.
- Add diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
- Cook for another 10 minutes.
- If using pasta, add it and cook for an additional 5-7 minutes.
- Serve hot.
Notes
- Adjust cooking time based on your air fryer model.
- Add cooked chicken or beans for extra protein.
- Store leftovers in the fridge for up to 3 days.
