A healthy and flavorful salad featuring roasted butternut squash and crunchy pumpkin seeds, perfect for a quick meal.
Ingredients
- 1 medium butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup pumpkin seeds
- 4 cups mixed greens
- 1/4 cup crumbled feta cheese (optional)
- 2 tbsp balsamic vinaigrette
Instructions
- Preheat air fryer to 400°F (200°C).
- Toss butternut squash cubes with olive oil, salt, and pepper.
- Air fry squash for 12-15 minutes until tender.
- Toast pumpkin seeds in the air fryer for 3-4 minutes.
- Combine mixed greens, roasted squash, and pumpkin seeds in a bowl.
- Drizzle with balsamic vinaigrette and top with feta cheese if desired.
