A healthy and flavorful salad featuring roasted butternut squash and crunchy pumpkin seeds, perfect for a quick meal.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup pumpkin seeds
  • 4 cups mixed greens
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tbsp balsamic vinaigrette


Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Toss butternut squash cubes with olive oil, salt, and pepper.
  3. Air fry squash for 12-15 minutes until tender.
  4. Toast pumpkin seeds in the air fryer for 3-4 minutes.
