Description
Fluffy muffins packed with Mediterranean flavors and melted cheese, made easily in your air fryer.
Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup grated cheddar cheese
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup chopped black olives
- 1/4 cup chopped fresh parsley
- 1/2 cup milk
- 1 egg
- 2 tbsp olive oil
Instructions
- Preheat your air fryer to 350°F (180°C).
- Mix flour, baking powder, and salt in a bowl.
- Stir in cheddar, feta, sun-dried tomatoes, olives, and parsley.
- In another bowl, whisk milk, egg, and olive oil.
- Combine wet and dry ingredients until just mixed.
- Spoon batter into greased muffin cups, filling halfway.
- Air fry for 10-12 minutes until golden.
- Let cool for 2 minutes before serving.
Notes
- Use silicone muffin cups for easy removal.
- Add 1/4 tsp dried oregano for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
- Reheat in the air fryer for 2 minutes.
