A quick and healthy meal featuring tender fish fillets marinated in zesty cilantro-lime flavors, cooked in an air fryer, and served over a bed of rice and fresh veggies.
Ingredients
- 4 white fish fillets (such as tilapia or cod)
- 1/4 cup fresh lime juice
- 2 tbsp olive oil
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked rice
- 1 cup shredded cabbage
- 1 avocado, sliced
- 1/2 cup diced tomatoes
- Lime wedges for serving
Instructions
- In a bowl, mix lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
- Place fish fillets in the marinade. Let sit for 15 minutes.
- Preheat the air fryer to 375°F (190°C).
- Place fish in the air fryer basket. Cook for 8-10 minutes until flaky.
- Assemble bowls with rice, cabbage, avocado, tomatoes, and fish.
- Serve with lime wedges.
