Description
A hearty and flavorful casserole made with cornbread and savory ingredients, cooked perfectly in an air fryer.
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 can (15 oz) creamed corn
- 1/2 cup diced cooked bacon
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced jalapeños (optional)
Instructions
- Preheat your air fryer to 350°F (175°C).
- In a large bowl, mix cornmeal, flour, baking powder, and salt.
- Add milk, vegetable oil, and egg. Stir until combined.
- Fold in creamed corn, bacon, cheese, and jalapeños.
- Pour the mixture into a greased baking dish that fits in your air fryer.
- Place the dish in the air fryer and cook for 25-30 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes before serving.
Notes
- For a spicier version, add more jalapeños.
- You can substitute bacon with cooked ground beef or sausage.
- Store leftovers in an airtight container in the fridge for up to 3 days.
