Description
Creamy avocado toast with a perfectly poached egg, made easy in an air fryer. A quick and nutritious breakfast.
Ingredients
- 1 ripe avocado
- 2 slices of whole grain bread
- 2 eggs
- 1 tbsp white vinegar
- Salt to taste
- Black pepper to taste
- 1 tsp lemon juice
- 1 tsp olive oil
- Red pepper flakes (optional)
Instructions
- Preheat the air fryer to 370°F (190°C).
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with lemon juice, salt, and black pepper.
- Lightly brush the bread slices with olive oil and air fry for 3 minutes until crispy.
- Fill a small bowl with water and add vinegar. Crack an egg into it.
- Place the bowl in the air fryer and cook for 4-5 minutes for a runny yolk.
- Spread the mashed avocado on the toast.
- Gently place the poached egg on top.
- Sprinkle with red pepper flakes if desired.
Notes
- Use fresh, ripe avocados for the best texture.
- Adjust cooking time for firmer eggs.
- For extra flavor, add chopped cilantro or feta cheese.
