Description

Creamy avocado toast with a perfectly poached egg, made easy in an air fryer. A quick and nutritious breakfast.


Ingredients

  • 1 ripe avocado
  • 2 slices of whole grain bread
  • 2 eggs
  • 1 tbsp white vinegar
  • Salt to taste
  • Black pepper to taste
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Red pepper flakes (optional)


Instructions

  1. Preheat the air fryer to 370°F (190°C).
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. Mash the avocado with lemon juice, salt, and black pepper.
  4. Lightly brush the bread slices with olive oil and air fry for 3 minutes until crispy.
  5. Fill a small bowl with water and add vinegar. Crack an egg into it.
  6. Place the bowl in the air fryer and cook for 4-5 minutes for a runny yolk.
  7. Spread the mashed avocado on the toast.
  8. Gently place the poached egg on top.
  9. Sprinkle with red pepper flakes if desired.
