Description
Crispy cod wraps made in the air fryer, served with a tangy lemon mayo. A quick and healthy meal perfect for any day.
Ingredients
- 2 cod fillets (about 6 oz each)
- 1 cup panko breadcrumbs
- 1 egg, beaten
- 1/4 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large tortillas
- 1 cup shredded lettuce
- 1/2 cup sliced cucumber
- 1/4 cup chopped red onion
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp lemon zest
Instructions
- Preheat the air fryer to 400°F (200°C).
- Mix flour, garlic powder, paprika, salt, and pepper in a shallow bowl.
- Dip each cod fillet in the beaten egg, then coat with the flour mixture, and finally with panko breadcrumbs.
- Place the coated cod fillets in the air fryer basket and cook for 10-12 minutes, flipping halfway, until golden and crispy.
- While the cod cooks, mix mayonnaise, lemon juice, and lemon zest in a small bowl to make the lemon mayo.
- Warm the tortillas slightly.
- Assemble the wraps by placing shredded lettuce, sliced cucumber, and red onion on each tortilla.
- Add a crispy cod fillet to each tortilla and drizzle with lemon mayo.
- Fold the tortillas into wraps and serve immediately.
Notes
- Use fresh cod for the best texture.
- Adjust the spices to your taste.
- For extra crispiness, spray the cod lightly with oil before air frying.
- Serve with extra lemon wedges if desired.
