Description
A quick and easy cold pasta salad made with crispy air-fried gnocchi, fresh vegetables, and a light dressing.
Ingredients
- 500g gnocchi
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh basil, chopped
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 200°C (400°F).
- Toss the gnocchi with olive oil and air fry for 8-10 minutes until crispy.
- Let the gnocchi cool to room temperature.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
- Add the cooled gnocchi to the bowl.
- In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Sprinkle fresh basil on top before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 2 days.
- Add grilled chicken or shrimp for extra protein.
- Use gluten-free gnocchi if needed.
