Description

A quick and easy cold pasta salad made with crispy air-fried gnocchi, fresh vegetables, and a light dressing.


Ingredients

  • 500g gnocchi
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste


Instructions

  1. Preheat your air fryer to 200°C (400°F).
  2. Toss the gnocchi with olive oil and air fry for 8-10 minutes until crispy.
  3. Let the gnocchi cool to room temperature.
  4. In a large bowl, combine cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
  5. Add the cooled gnocchi to the bowl.
  6. In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  7. Pour the dressing over the salad and toss gently.
  8. Sprinkle fresh basil on top before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Add grilled chicken or shrimp for extra protein.
