Description
Crispy air fryer croquettes made with mashed potatoes, perfect as a snack or side dish.
Ingredients
- 2 cups mashed potatoes
- 1/4 cup grated cheese
- 1/4 cup breadcrumbs
- 1 egg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped parsley
Instructions
- Mix mashed potatoes, cheese, salt, pepper, and parsley in a bowl.
- Shape the mixture into small logs or balls.
- Dip each croquette in beaten egg, then coat with breadcrumbs.
- Preheat air fryer to 375°F (190°C).
- Place croquettes in the air fryer basket in a single layer.
- Cook for 10-12 minutes, flipping halfway, until golden brown.
- Remove and serve hot.
Notes
- Use cold mashed potatoes for easier shaping.
- For extra crispiness, spray croquettes lightly with oil before air frying.
- Store leftovers in an airtight container for up to 2 days.
