Description
A simple, budget-friendly vegetable soup made in an air fryer using ingredients from the dollar store.
Ingredients
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat your air fryer to 360°F (180°C) for 5 minutes.
- Place carrots, celery, and onion in the air fryer basket.
- Air fry for 10 minutes, shaking halfway.
- Transfer vegetables to a pot and add diced tomatoes, vegetable broth, salt, pepper, and thyme.
- Simmer on medium heat for 15 minutes.
- Serve hot.

- Use any leftover vegetables you have.
