Description
A delicious and easy seafood enchilada recipe made in the air fryer.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup crab meat
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 cup shredded cheese
- 6 corn tortillas
- 1 cup enchilada sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat air fryer to 375°F.
- In a pan, sauté onions and bell peppers in olive oil until soft.
- Add shrimp and crab meat, cook for 3 minutes.
- Season with garlic powder, cumin, salt, and pepper.
- Warm tortillas briefly in the air fryer to make them pliable.
- Fill each tortilla with seafood mixture and roll tightly.
- Place enchiladas in the air fryer basket, seam side down.
- Cook for 8-10 minutes until crispy.
- Top with enchilada sauce and cheese.
- Cook for an additional 2 minutes to melt cheese.
- Serve hot.
