Description

A hearty and flavorful pasta salad perfect for fall, made easily in your air fryer.


Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup butternut squash, cubed
  • 1 cup Brussels sprouts, halved
  • 1/2 cup dried cranberries
  • 1/4 cup pecans, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp balsamic glaze


Instructions

  1. Cook pasta according to package instructions, then drain and set aside.
  2. Toss butternut squash and Brussels sprouts with olive oil, salt, pepper, and garlic powder.
  3. Air fry the vegetables at 375°F for 12-15 minutes, shaking halfway.
  4. Combine cooked pasta, roasted vegetables, cranberries, pecans, and feta in a large bowl.
  5. Drizzle with balsamic glaze and toss gently.
  6. Serve warm or chilled.
