Description
A hearty and flavorful pasta salad perfect for fall, made easily in your air fryer.
Ingredients
- 8 oz pasta (penne or rotini)
- 1 cup butternut squash, cubed
- 1 cup Brussels sprouts, halved
- 1/2 cup dried cranberries
- 1/4 cup pecans, chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup feta cheese, crumbled
- 2 tbsp balsamic glaze
Instructions
- Cook pasta according to package instructions, then drain and set aside.
- Toss butternut squash and Brussels sprouts with olive oil, salt, pepper, and garlic powder.
- Air fry the vegetables at 375°F for 12-15 minutes, shaking halfway.
- Combine cooked pasta, roasted vegetables, cranberries, pecans, and feta in a large bowl.
- Drizzle with balsamic glaze and toss gently.
- Serve warm or chilled.
Notes
- Use gluten-free pasta if needed.
- Swap feta for goat cheese if preferred.
- Add grilled chicken for extra protein.
