A quick and healthy air fryer grilled chicken salad bowl with fresh avocado, crisp greens, and a zesty dressing.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups mixed salad greens
- 1 ripe avocado, sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tbsp lemon juice
- 1 tbsp honey
- 1 tbsp Dijon mustard
Instructions
- Preheat your air fryer to 375°F (190°C).
- Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
- Place chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
- While chicken cooks, prepare the salad by combining mixed greens, avocado slices, cherry tomatoes, and red onion in a bowl.
- In a small bowl, whisk together lemon juice, honey, and Dijon mustard for the dressing.
- Slice the cooked chicken and place it on top of the salad.
- Drizzle the dressing over the salad and serve immediately.
Notes
- For extra flavor, marinate the chicken for 30 minutes before cooking.
- Use any salad greens you prefer, such as spinach or arugula.
