Ingredients
- 1 cup butternut squash, cubed
- 1/2 cup wild rice, cooked
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 1/4 cup baby spinach
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp paprika
Instructions
- Preheat air fryer to 375°F (190°C).
- Toss butternut squash with olive oil, salt, pepper, garlic powder, and paprika.
- Air fry butternut squash for 12-15 minutes until tender.
- Assemble bowls with cooked wild rice, roasted squash, cherry tomatoes, red onion, and baby spinach.
