Ingredients
- 1 cup shredded hash browns
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 2 large eggs, scrambled
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat the air fryer to 375°F (190°C).
- Toss the hash browns with olive oil, salt, and pepper.
- Air fry the hash browns for 10 minutes until crispy.
- Scramble the eggs in a pan and set aside.
- Warm the tortillas in the air fryer for 30 seconds.
- Layer hash browns, cheese, eggs, bell peppers, and onions on each tortilla.
- Roll the tortillas tightly and place seam-side down.
- Air fry for 3-4 minutes until golden and crispy.
- Serve immediately.
