Description
A quick and easy keto-friendly Cobb salad made in the air fryer for crispy bacon and chicken.
Ingredients
- 2 boneless, skinless chicken breasts
- 4 slices bacon
- 2 cups mixed greens
- 1 avocado, sliced
- 2 hard-boiled eggs, chopped
- 1/4 cup crumbled blue cheese
- 1/4 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat air fryer to 375°F (190°C).
- Season chicken with salt and pepper, then air fry for 12-15 minutes until cooked through.
- Air fry bacon for 8-10 minutes until crispy.
- Chop cooked chicken and bacon into bite-sized pieces.
- Arrange mixed greens on a plate and top with chicken, bacon, avocado, eggs, blue cheese, and tomatoes.
- Drizzle with olive oil and serve.
Notes
- Use pre-cooked chicken to save time.
- Swap blue cheese for feta if preferred.
- Add a keto-friendly dressing if desired.
