A quick and easy keto-friendly Cobb salad made in the air fryer for crispy bacon and chicken.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices bacon
  • 2 cups mixed greens
  • 1 avocado, sliced
  • 2 hard-boiled eggs, chopped
  • 1/4 cup crumbled blue cheese
  • 1/4 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Season chicken with salt and pepper, then air fry for 12-15 minutes until cooked through.
  3. Air fry bacon for 8-10 minutes until crispy.
  4. Chop cooked chicken and bacon into bite-sized pieces.
  5. Arrange mixed greens on a plate and top with chicken, bacon, avocado, eggs, blue cheese, and tomatoes.
  6. Drizzle with olive oil and serve.
