Ingredients
- 2 ripe avocados
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp lemon zest
- 1 tsp dried herbs (such as thyme or parsley)
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1 tbsp lemon juice
Instructions
- Cut the avocados into wedges and set aside.
- In a bowl, mix breadcrumbs, Parmesan, lemon zest, dried herbs, garlic powder, salt, and pepper.
- In another bowl, whisk the egg with lemon juice.
- Dip each avocado wedge in the egg mixture, then coat with the breadcrumb mix.
- Preheat the air fryer to 375°F (190°C).
- Place the coated avocado wedges in the air fryer basket in a single layer.
- Cook for 8-10 minutes until golden and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
- Use slightly firm avocados for easier handling.
- For extra crispiness, spray the coated wedges lightly with cooking oil.
