Description

A healthy and flavorful alternative to traditional meatballs made with lentils and walnuts, cooked in an air fryer for a crispy texture.


Ingredients

  • 1 cup cooked lentils
  • 1/2 cup walnuts
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Blend lentils, walnuts, breadcrumbs, egg, garlic, oregano, basil, salt, and pepper in a food processor until well combined.
  3. Shape the mixture into small meatballs.
  4. Brush the meatballs lightly with olive oil.
  5. Place the meatballs in the air fryer basket, leaving space between them.
  6. Cook for 10-12 minutes, flipping halfway, until golden brown and crispy.
  7. Serve warm with your favorite sauce or dip.

Notes

  • For a vegan version, replace the egg with a flax egg.
  • Store leftovers in an airtight container for up to 3 days.
