Description
A healthy and flavorful alternative to traditional meatballs made with lentils and walnuts, cooked in an air fryer for a crispy texture.
Ingredients
- 1 cup cooked lentils
- 1/2 cup walnuts
- 1/4 cup breadcrumbs
- 1 egg
- 1 clove garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat your air fryer to 375°F (190°C).
- Blend lentils, walnuts, breadcrumbs, egg, garlic, oregano, basil, salt, and pepper in a food processor until well combined.
- Shape the mixture into small meatballs.
- Brush the meatballs lightly with olive oil.
- Place the meatballs in the air fryer basket, leaving space between them.
- Cook for 10-12 minutes, flipping halfway, until golden brown and crispy.
- Serve warm with your favorite sauce or dip.
Notes
- For a vegan version, replace the egg with a flax egg.
- Store leftovers in an airtight container for up to 3 days.
- Reheat in the air fryer for 3-4 minutes to restore crispiness.
