Ingredients

  • 2 large russet potatoes, cut into wedges
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp lemon juice
  • 1 tbsp parsley, chopped


Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Toss potato wedges with olive oil, salt, and pepper.
  3. Air fry wedges for 15-20 minutes, shaking halfway, until golden and crispy.
  4. In a skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds.
  5. Add shrimp and cook for 2-3 minutes until pink.
  6. Stir in lemon juice and parsley.
  7. Top the wedges with shrimp scampi and serve immediately.
