Description
Crispy air-fried potato wedges topped with succulent shrimp scampi for a quick and flavorful meal.
Ingredients
- 2 large russet potatoes, cut into wedges
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 lb shrimp, peeled and deveined
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp lemon juice
- 1 tbsp parsley, chopped
Instructions
- Preheat air fryer to 400°F (200°C).
- Toss potato wedges with olive oil, salt, and pepper.
- Air fry wedges for 15-20 minutes, shaking halfway, until golden and crispy.
- In a skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds.
- Add shrimp and cook for 2-3 minutes until pink.
- Stir in lemon juice and parsley.
- Top the wedges with shrimp scampi and serve immediately.
Notes
- For extra crispiness, soak potato wedges in cold water for 30 minutes before air frying.
- Adjust seasoning to taste.
- Serve with extra lemon wedges if desired.
