Description
Crispy air-fried potato wedges topped with succulent shrimp scampi.
Ingredients
- 4 large potatoes, cut into wedges
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 lb shrimp, peeled and deveined
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp parsley, chopped
Instructions
- Preheat air fryer to 400°F.
- Toss potato wedges with olive oil, salt, paprika, and garlic powder.
- Air fry wedges for 20 minutes, shaking halfway.
- Melt butter in a pan over medium heat.
- Add garlic and shrimp, cook until shrimp turns pink.
- Stir in lemon juice and parsley.
- Top wedges with shrimp scampi.
Notes
- Use russet potatoes for best texture.
- Adjust seasoning to taste.
- Serve immediately.
