Description

A healthy and flavorful quinoa salad with Mediterranean ingredients, cooked in an air fryer and dressed with a tangy lemon vinaigrette.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Rinse quinoa under cold water and drain.
  2. Cook quinoa in an air fryer at 375°F (190°C) for 12 minutes, shaking halfway.
  3. Let quinoa cool.
  4. In a large bowl, combine cucumber, bell pepper, red onion, olives, feta, and parsley.
  5. Add cooled quinoa and mix.
  6. Whisk olive oil, lemon juice, oregano, salt, and pepper.
  7. Pour dressing over salad and toss.
  8. Serve chilled.

Notes

  • For best flavor, chill salad for 30 minutes before serving.
  • Add grilled chicken for extra protein.
