Description
A healthy and flavorful quinoa salad with Mediterranean ingredients, cooked in an air fryer and dressed with a tangy lemon vinaigrette.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup kalamata olives, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and drain.
- Cook quinoa in an air fryer at 375°F (190°C) for 12 minutes, shaking halfway.
- Let quinoa cool.
- In a large bowl, combine cucumber, bell pepper, red onion, olives, feta, and parsley.
- Add cooled quinoa and mix.
- Whisk olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over salad and toss.
- Serve chilled.
Notes
- For best flavor, chill salad for 30 minutes before serving.
- Add grilled chicken for extra protein.
- Store leftovers in the fridge for up to 3 days.
