Description

A simple and healthy dish made with fresh Mediterranean vegetables roasted in an air fryer for a crispy texture.


Ingredients

  • 1 medium zucchini, sliced
  • 1 medium red bell pepper, chopped
  • 1 medium yellow bell pepper, chopped
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a large bowl, toss the vegetables with olive oil, oregano, garlic powder, salt, and black pepper.
  3. Place the vegetables in the air fryer basket in a single layer.
  4. Cook for 12-15 minutes, shaking the basket halfway through.
  5. Check for doneness and cook 2-3 minutes more if needed.
  6. Serve warm.
