Description
Delicious and moist zucchini muffins made quickly in your air fryer.
Ingredients
- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat air fryer to 350°F (175°C).
- In a bowl, mix zucchini, sugar, oil, and egg.
- Add flour, baking powder, cinnamon, and salt.
- Stir until just combined.
- Spoon batter into muffin cups.
- Air fry for 10-12 minutes or until a toothpick comes out clean.
- Let cool before serving.
