Description
A quick and healthy salmon dish with a crispy pesto crust, cooked in an air fryer.
Ingredients
- 2 salmon fillets (6 oz each)
- 1/4 cup basil pesto
- 1/4 cup panko breadcrumbs
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp lemon zest
Instructions
- Preheat air fryer to 390°F (200°C).
- Pat salmon fillets dry and season with salt and pepper.
- Mix pesto, breadcrumbs, olive oil, and lemon zest in a bowl.
- Spread the pesto mixture evenly over the salmon fillets.
- Place salmon in the air fryer basket, crust side up.
- Cook for 8-10 minutes until the crust is golden and salmon flakes easily.
- Serve immediately.
Notes
- Use fresh salmon for best results.
- Adjust cooking time based on thickness of fillets.
- Store leftovers in an airtight container for up to 2 days.
