Description

A creamy and flavorful roasted butternut squash soup made in an air fryer for easy preparation.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg
  • 1/2 cup coconut milk


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper.
  3. Place the squash in the air fryer basket and roast for 15-20 minutes until tender.
  4. In a pot, sauté onion and garlic until soft.
  5. Add roasted squash, vegetable broth, and nutmeg. Simmer for 10 minutes.
  6. Blend the soup until smooth, then stir in coconut milk.
  7. Serve warm.
