Description
A healthy and flavorful carrot salad made with roasted carrots cooked in an air fryer, topped with a creamy tahini dressing.
Ingredients
- 4 large carrots, peeled and sliced into sticks
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cumin
- 1/4 cup tahini
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 2 tbsp water
- 1 tbsp chopped parsley
Instructions
- Preheat the air fryer to 400°F (200°C).
- Toss the carrot sticks with olive oil, salt, pepper, and cumin.
- Place the carrots in the air fryer basket and cook for 12-15 minutes, shaking halfway.
- In a bowl, whisk tahini, lemon juice, garlic, and water until smooth.
- Arrange the roasted carrots on a plate, drizzle with tahini dressing, and garnish with parsley.
Notes
- Adjust cooking time based on carrot thickness.
- Add a pinch of paprika for extra flavor.
- Store leftovers in an airtight container for up to 2 days.
