Description
A quick and healthy salad with crispy roasted chickpeas from the air fryer. Perfect for a light lunch or side dish.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 4 cups mixed salad greens
- 1/2 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp lemon juice
Instructions
- Preheat air fryer to 375°F (190°C).
- Toss chickpeas with olive oil, salt, pepper, and paprika.
- Air fry chickpeas for 12-15 minutes until crispy.
- Combine salad greens, cucumber, red onion, and feta in a bowl.
- Top with roasted chickpeas and drizzle with lemon juice.
- Toss gently before serving.
Notes
- Store leftover chickpeas in an airtight container for up to 3 days.
- Add avocado for extra creaminess.
- Swap feta for vegan cheese if needed.
