Description

A quick and healthy salad with crispy roasted chickpeas from the air fryer. Perfect for a light lunch or side dish.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 4 cups mixed salad greens
  • 1/2 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp lemon juice


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Toss chickpeas with olive oil, salt, pepper, and paprika.
  3. Air fry chickpeas for 12-15 minutes until crispy.
  4. Combine salad greens, cucumber, red onion, and feta in a bowl.
  5. Top with roasted chickpeas and drizzle with lemon juice.
  6. Toss gently before serving.
