Description

A simple and healthy dish of root vegetables roasted to perfection in an air fryer. Crispy on the outside, tender on the inside, and full of flavor.


Ingredients

  • 2 cups carrots, peeled and chopped
  • 2 cups parsnips, peeled and chopped
  • 2 cups sweet potatoes, peeled and cubed
  • 1 cup beets, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a large bowl, toss the chopped vegetables with olive oil, garlic powder, thyme, salt, and pepper.
  3. Place the vegetables in the air fryer basket in a single layer.
  4. Cook for 15 minutes, shaking the basket halfway through.
  5. Check for doneness. Cook for another 5 minutes if needed.
  6. Serve warm.
