A quick and easy air fryer shrimp risotto with garlic flavor, perfect for a satisfying meal.
Ingredients
- 1 cup Arborio rice
- 1 lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 small onion, finely chopped
- Salt and pepper to taste
- 1 tbsp butter
- Fresh parsley for garnish
Instructions
- Preheat air fryer to 375°F (190°C).
- Heat olive oil in a pan and sauté onion until translucent.
- Add minced garlic and cook for 30 seconds.
- Stir in Arborio rice and toast for 1-2 minutes.
- Pour in white wine and cook until absorbed.
- Transfer mixture to air fryer basket and add shrimp.
- Cook for 12-15 minutes, stirring halfway.
- Add broth gradually, stirring occasionally.
- Once rice is tender, mix in Parmesan, butter, salt, and pepper.
- Garnish with fresh parsley before serving.
