Description
A hearty beef and vegetable stew cooked in an air fryer slow cooker for tender meat and flavorful broth.
Ingredients
- 1 lb beef chuck, cubed
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1/2 cup onions, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 bay leaf
Instructions
- Season beef with salt and pepper.
- Place beef, carrots, potatoes, onions, and garlic in the slow cooker.
- Mix beef broth and tomato paste, then pour over the ingredients.
- Add thyme and bay leaf.
- Cook on low for 6-8 hours or high for 4-5 hours.
- Remove bay leaf before serving.
Notes
- Cut beef into even pieces for uniform cooking.
- Add more broth if needed during cooking.
- For a thicker stew, mix 1 tbsp cornstarch with water and stir in before serving.
