Description

A quick and healthy breakfast quesadilla made with spinach, eggs, and cheese, cooked in an air fryer for a crispy finish.


Ingredients

  • 2 large eggs
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • 1 whole wheat tortilla
  • 1 tsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, whisk the eggs and season with salt and pepper.
  3. Heat olive oil in a pan over medium heat, add spinach, and sauté for 1 minute.
  4. Pour the eggs into the pan and scramble until fully cooked.
  5. Place the tortilla on a flat surface, spread the scrambled eggs and spinach on one half, then sprinkle cheese on top.
  6. Fold the tortilla in half and place it in the air fryer basket.
  7. Cook for 3-4 minutes until crispy and golden.
  8. Remove, let cool slightly, then slice and serve.
