Description
A hearty and flavorful soup made with air-fried Tuscan sausage and gnocchi, perfect for a quick and satisfying meal.
Ingredients
- 1 lb Tuscan sausage, casings removed
- 1 package (16 oz) potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup chopped spinach
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1 tbsp olive oil
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, mix the sausage with olive oil, Italian seasoning, and red pepper flakes.
- Air fry the sausage for 8-10 minutes, breaking it into small pieces, until browned.
- In a large pot, sauté onion and garlic until softened.
- Add chicken broth, heavy cream, and cooked sausage to the pot. Bring to a simmer.
- Stir in the gnocchi and chopped spinach. Cook for 5-7 minutes until gnocchi is tender.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
Notes
- For a lighter version, substitute heavy cream with half-and-half or milk.
- Add extra vegetables like diced tomatoes or bell peppers for more flavor.
- Store leftovers in an airtight container for up to 3 days.
