Description
A creamy vegan cheese ball made with cashews, perfect for spreading on crackers or dipping vegetables. This air fryer version is quick and easy to prepare.
Ingredients
- 1 cup raw cashews (soaked overnight)
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 clove garlic (minced)
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley (chopped, for coating)
Instructions
- Drain soaked cashews and blend with nutritional yeast, lemon juice, garlic, onion powder, salt, and pepper until smooth.
- Shape the mixture into a ball and roll it in chopped parsley.
- Preheat air fryer to 350°F (175°C).
- Place cheese ball in the air fryer basket and cook for 8-10 minutes until slightly firm.
- Let cool before serving with crackers or vegetables.
Notes
- Soak cashews for at least 4 hours if short on time.
- Adjust seasoning to taste.
- Store leftovers in an airtight container in the fridge for up to 3 days.
