Description

Crispy vegan mac-and-cheese sticks cooked in an air fryer for a healthier twist on the classic comfort food.


Ingredients

  • 2 cups cooked elbow macaroni
  • 1 cup vegan cheddar cheese shreds
  • 1/4 cup nutritional yeast
  • 1/2 cup unsweetened almond milk
  • 1 tbsp vegan butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp turmeric
  • 1 cup breadcrumbs
  • 1 tbsp flaxseed meal mixed with 3 tbsp water


Instructions

  1. Mix cooked macaroni with vegan cheese, nutritional yeast, almond milk, vegan butter, and spices in a bowl
  2. Spread mixture in a lined baking dish and refrigerate for 2 hours
  3. Cut chilled mac-and-cheese into stick shapes
  4. Dip each stick in flaxseed mixture then coat with breadcrumbs
  5. Preheat air fryer to 375°F (190°C)
  6. Arrange sticks in air fryer basket without overlapping
  7. Cook for 8-10 minutes until golden brown
  8. Flip halfway through cooking
  9. Serve immediately with vegan ranch or marinara sauce

Notes

  • For crispier sticks, spray lightly with oil before air frying
  • Chilling time is essential for proper stick formation
  • Leftovers can be refrigerated for 2 days
