Description
Crispy vegan mac-and-cheese sticks cooked in an air fryer for a healthier twist on the classic comfort food.
Ingredients
- 2 cups cooked elbow macaroni
- 1 cup vegan cheddar cheese shreds
- 1/4 cup nutritional yeast
- 1/2 cup unsweetened almond milk
- 1 tbsp vegan butter
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp turmeric
- 1 cup breadcrumbs
- 1 tbsp flaxseed meal mixed with 3 tbsp water
Instructions
- Mix cooked macaroni with vegan cheese, nutritional yeast, almond milk, vegan butter, and spices in a bowl
- Spread mixture in a lined baking dish and refrigerate for 2 hours
- Cut chilled mac-and-cheese into stick shapes
- Dip each stick in flaxseed mixture then coat with breadcrumbs
- Preheat air fryer to 375°F (190°C)
- Arrange sticks in air fryer basket without overlapping
- Cook for 8-10 minutes until golden brown
- Flip halfway through cooking
- Serve immediately with vegan ranch or marinara sauce
Notes
- For crispier sticks, spray lightly with oil before air frying
- Chilling time is essential for proper stick formation
- Leftovers can be refrigerated for 2 days
- Reheat in air fryer at 350°F for 3-4 minutes
