Description
A creamy and flavorful vegan spinach artichoke dip made easily in your air fryer.
Ingredients
- 1 cup raw cashews (soaked for 4 hours or boiled for 10 minutes)
- 1 cup chopped artichoke hearts (canned or frozen)
- 1 cup fresh spinach, chopped
- 1/2 cup unsweetened almond milk
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Drain and rinse the soaked cashews.
- In a blender, combine cashews, almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and black pepper. Blend until smooth.
- Transfer the mixture to a bowl and fold in the chopped spinach and artichoke hearts.
- Pour the mixture into an oven-safe dish that fits in your air fryer.
- Air fry at 350°F (175°C) for 15-20 minutes, or until the top is golden and bubbly.
- Let cool slightly before serving with chips, bread, or vegetables.
Notes
- For a nut-free version, replace cashews with sunflower seeds.
- Adjust salt and spices to taste.
- Store leftovers in the fridge for up to 3 days.
