Description

A creamy and flavorful vegan spinach artichoke dip made easily in your air fryer.


Ingredients

  • 1 cup raw cashews (soaked for 4 hours or boiled for 10 minutes)
  • 1 cup chopped artichoke hearts (canned or frozen)
  • 1 cup fresh spinach, chopped
  • 1/2 cup unsweetened almond milk
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Drain and rinse the soaked cashews.
  2. In a blender, combine cashews, almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and black pepper. Blend until smooth.
  3. Transfer the mixture to a bowl and fold in the chopped spinach and artichoke hearts.
  4. Pour the mixture into an oven-safe dish that fits in your air fryer.
  5. Air fry at 350°F (175°C) for 15-20 minutes, or until the top is golden and bubbly.
  6. Let cool slightly before serving with chips, bread, or vegetables.

Notes

  • For a nut-free version, replace cashews with sunflower seeds.
