Description
A simple and healthy Air Fryer Whole 30 BBQ Chicken Bowl packed with protein and fresh vegetables.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1/2 cup Whole 30-compliant BBQ sauce
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked cauliflower rice
- 1 avocado, sliced
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Preheat the air fryer to 375°F.
- In a bowl, mix chicken with olive oil, smoked paprika, garlic powder, salt, and black pepper.
- Place chicken in the air fryer basket and cook for 12 minutes, flipping halfway.
- Brush BBQ sauce on chicken and cook for 3 more minutes.
- Slice chicken into strips.
- Assemble bowls with cauliflower rice, chicken, avocado, carrots, and cilantro.
- Serve with lime wedges.
Notes
- Use any Whole 30-approved BBQ sauce.
- Swap cauliflower rice for regular rice if not following Whole 30.
- Store leftovers in an airtight container for up to 3 days.
