Description
A hearty and flavorful soup inspired by the classic Zuppa Toscana, made easily in an air fryer for a quick and delicious meal.
Ingredients
- 1 lb Italian sausage, casings removed
- 4 cups chicken broth
- 4 cups water
- 4 medium potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bunch kale, stems removed and leaves chopped
- 1 cup heavy cream
- Salt and pepper to taste
- 1/2 tsp red pepper flakes (optional)
- Grated Parmesan cheese for serving
Instructions
- Preheat your air fryer to 375°F (190°C).
- Cook the Italian sausage in the air fryer basket for 8-10 minutes, breaking it into crumbles, until browned.
- Remove the sausage and set aside. Drain excess grease.
- In the air fryer pot, add chicken broth, water, potatoes, onion, and garlic. Air fry for 15 minutes or until potatoes are tender.
- Add the cooked sausage, kale, and red pepper flakes (if using). Air fry for another 5 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, topped with grated Parmesan cheese.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Adjust the spice level by adding more or less red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
