Description
These Christmas Air Fryer Brisket Elote Tacos combine tender brisket with creamy elote for a festive twist on taco night.
Ingredients
- 1 lb beef brisket, sliced thin
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 corn tortillas
- 1 cup grilled corn kernels
- 1/4 cup mayonnaise
- 1/4 cup cotija cheese, crumbled
- 1 lime, cut into wedges
- 2 tbsp fresh cilantro, chopped
Instructions
- Preheat the air fryer to 375°F (190°C).
- Rub the brisket with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper.
- Place the brisket in the air fryer basket and cook for 12-15 minutes, flipping halfway, until browned.
- Remove the brisket and let it rest for 5 minutes before slicing.
- Warm the tortillas in the air fryer for 1-2 minutes.
- Mix the grilled corn with mayonnaise and cotija cheese.
- Assemble the tacos with brisket, corn mixture, cilantro, and a squeeze of lime.
Notes
- For extra flavor, marinate the brisket overnight.
- Use fresh corn if possible, but frozen works too.
- Adjust the spice level by adding more or less chili powder.
