Description

These Christmas Air Fryer Brisket Elote Tacos combine tender brisket with creamy elote for a festive twist on taco night.


Ingredients

  • 1 lb beef brisket, sliced thin
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 corn tortillas
  • 1 cup grilled corn kernels
  • 1/4 cup mayonnaise
  • 1/4 cup cotija cheese, crumbled
  • 1 lime, cut into wedges
  • 2 tbsp fresh cilantro, chopped


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Rub the brisket with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper.
  3. Place the brisket in the air fryer basket and cook for 12-15 minutes, flipping halfway, until browned.
  4. Remove the brisket and let it rest for 5 minutes before slicing.
  5. Warm the tortillas in the air fryer for 1-2 minutes.
  6. Mix the grilled corn with mayonnaise and cotija cheese.
  7. Assemble the tacos with brisket, corn mixture, cilantro, and a squeeze of lime.

Notes

  • For extra flavor, marinate the brisket overnight.
  • Use fresh corn if possible, but frozen works too.
  • Adjust the spice level by adding more or less chili powder.
