Description
A festive and healthy casserole made with butternut squash and kale, perfect for Christmas dinner. Cooked in an air fryer for a crispy texture.
Ingredients
- 2 cups diced butternut squash
- 2 cups chopped kale
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat air fryer to 375°F (190°C).
- Toss butternut squash and kale with olive oil, garlic powder, thyme, salt, and pepper.
- Place mixture in the air fryer basket in a single layer.
- Cook for 15 minutes, shaking halfway through.
- Sprinkle with Parmesan cheese if desired and cook for 2 more minutes.
- Serve warm.
Notes
- Use fresh kale for best results.
- Adjust seasoning to taste.
- For extra crispiness, cook for an additional 2 minutes.
