Description

A festive and easy-to-make chicken enchilada casserole cooked in an air fryer, perfect for Christmas dinner.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 6 corn tortillas, cut into quarters
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup diced green chilies
  • 1/4 cup chopped cilantro
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a bowl, mix shredded chicken, black beans, corn, green chilies, cumin, chili powder, salt, and pepper.
  3. Spread a thin layer of enchilada sauce at the bottom of an air fryer-safe baking dish.
  4. Layer tortilla pieces, chicken mixture, cheese, and sauce, repeating until all ingredients are used.
  5. Top with remaining cheese.
  6. Place the dish in the air fryer and cook for 15-20 minutes or until cheese is bubbly and golden.
  7. Garnish with chopped cilantro before serving.
