Description
A festive and easy-to-make chicken enchilada casserole cooked in an air fryer, perfect for Christmas dinner.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6 corn tortillas, cut into quarters
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup diced green chilies
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, mix shredded chicken, black beans, corn, green chilies, cumin, chili powder, salt, and pepper.
- Spread a thin layer of enchilada sauce at the bottom of an air fryer-safe baking dish.
- Layer tortilla pieces, chicken mixture, cheese, and sauce, repeating until all ingredients are used.
- Top with remaining cheese.
- Place the dish in the air fryer and cook for 15-20 minutes or until cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
Notes
- Use rotisserie chicken for quicker prep.
- Adjust spice levels by adding more or less chili powder.
- For extra crispiness, air fry for an additional 2-3 minutes.
