A quick and flavorful meal perfect for Christmas gatherings. These air fryer chipotle chicken fajita bowls are packed with smoky spice and fresh ingredients.
Ingredients
- 1 lb boneless, skinless chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tbsp chipotle seasoning
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lime, juiced
- 2 cups cooked rice
- 1/2 cup sour cream
- 1/2 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, toss chicken strips with olive oil, chipotle seasoning, garlic powder, cumin, salt, and black pepper.
- Place chicken in the air fryer basket and cook for 10 minutes, shaking halfway.
- Add bell peppers and onion to the air fryer with the chicken. Cook for another 5-7 minutes until vegetables are tender and chicken is fully cooked.
- Drizzle lime juice over the chicken and vegetables.
- Divide cooked rice among bowls. Top with chicken, peppers, and onions.
- Add sour cream, shredded cheese, and garnish with cilantro.
Notes
- Adjust chipotle seasoning for more or less heat.
- Use leftover rotisserie chicken for a quicker version.
- Substitute Greek yogurt for sour cream if preferred.
