Description
A quick and flavorful dish featuring shrimp in a coconut curry sauce, served over rice and cooked in an air fryer.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup coconut milk
- 2 tbsp curry powder
- 1 tbsp garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp lime juice
- 1 tbsp olive oil
- 1 cup cooked rice
- 1/2 cup red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- Salt to taste
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, mix shrimp, coconut milk, curry powder, garlic, ginger, lime juice, and olive oil.
- Place shrimp mixture in the air fryer basket and cook for 8-10 minutes.
- Serve over cooked rice and top with diced bell pepper and cilantro.
