Description

A comforting and creamy chicken and rice casserole made easy in the air fryer. Perfect for a quick holiday dinner.


Ingredients

  • 1 cup long-grain white rice
  • 1.5 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 1 tbsp olive oil


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, mix rice, chicken broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper.
  3. Pour mixture into an air fryer-safe baking dish.
  4. Add cubed chicken on top and drizzle with olive oil.
  5. Cover with foil and air fry for 20 minutes.
  6. Remove foil, sprinkle with cheddar and Parmesan cheese.
  7. Air fry uncovered for another 5-7 minutes until cheese melts and chicken is cooked through.
  8. Let rest for 5 minutes before serving.

Notes

  • Use jasmine rice for added fragrance.
  • Adjust cooking time if using frozen chicken.
  • Stir halfway if rice isn’t fully submerged.
