Description
A comforting and creamy chicken and rice casserole made easy in the air fryer. Perfect for a quick holiday dinner.
Ingredients
- 1 cup long-grain white rice
- 1.5 cups chicken broth
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, mix rice, chicken broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper.
- Pour mixture into an air fryer-safe baking dish.
- Add cubed chicken on top and drizzle with olive oil.
- Cover with foil and air fry for 20 minutes.
- Remove foil, sprinkle with cheddar and Parmesan cheese.
- Air fry uncovered for another 5-7 minutes until cheese melts and chicken is cooked through.
- Let rest for 5 minutes before serving.
Notes
- Use jasmine rice for added fragrance.
- Adjust cooking time if using frozen chicken.
- Stir halfway if rice isn’t fully submerged.
