Description
A creamy and comforting white chicken lasagna soup made in the air fryer with spinach and cheese for a festive Christmas meal.
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 6 lasagna noodles, broken into pieces
- 1 tsp dried Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 360°F (180°C).
- In an air fryer-safe dish, heat olive oil and sauté onion and garlic until soft.
- Add diced chicken and cook until no longer pink.
- Pour in chicken broth and stir in broken lasagna noodles.
- Air fry for 10 minutes, stirring halfway.
- Add heavy cream, spinach, mozzarella, and Parmesan cheese. Stir well.
- Air fry for another 5 minutes until cheese melts and noodles are tender.
- Season with Italian seasoning, salt, and pepper. Serve hot.
Notes
- Use gluten-free noodles for a gluten-free option.
- Substitute half-and-half for a lighter version.
- Add extra vegetables like mushrooms if desired.
