Description

Crispy Mexican street corn fritters made in an air fryer for a festive Christmas twist. These fritters are packed with flavor and perfect for holiday gatherings.


Ingredients

  • 2 cups corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup grated cotija cheese
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 tablespoon melted butter


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a large bowl, mix corn, flour, cornmeal, cotija cheese, cilantro, chili powder, garlic powder, salt, and black pepper.
  3. In a separate bowl, whisk the egg, mayonnaise, lime juice, and melted butter.
  4. Combine the wet and dry ingredients until well mixed.
  5. Scoop tablespoon-sized portions of the mixture and shape into small patties.
  6. Place the patties in the air fryer basket, leaving space between them.
  7. Cook for 8-10 minutes, flipping halfway, until golden and crispy.
  8. Serve warm with extra cotija cheese and lime wedges.

Notes

  • Use fresh or frozen corn kernels.
  • Adjust chili powder for more or less heat.
  • For a vegan version, replace egg with flaxseed and omit cheese.
