Description
Crispy Mexican street corn fritters made in an air fryer for a festive Christmas twist. These fritters are packed with flavor and perfect for holiday gatherings.
Ingredients
- 2 cups corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup grated cotija cheese
- 1/4 cup chopped cilantro
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 tablespoon melted butter
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a large bowl, mix corn, flour, cornmeal, cotija cheese, cilantro, chili powder, garlic powder, salt, and black pepper.
- In a separate bowl, whisk the egg, mayonnaise, lime juice, and melted butter.
- Combine the wet and dry ingredients until well mixed.
- Scoop tablespoon-sized portions of the mixture and shape into small patties.
- Place the patties in the air fryer basket, leaving space between them.
- Cook for 8-10 minutes, flipping halfway, until golden and crispy.
- Serve warm with extra cotija cheese and lime wedges.
Notes
- Use fresh or frozen corn kernels.
- Adjust chili powder for more or less heat.
- For a vegan version, replace egg with flaxseed and omit cheese.
- Store leftovers in an airtight container for up to 2 days.
